Ingredients:
2 medium onions - sliced
1 tsp thyme (or 2 tsp fresh)
1 tsp dried oregano
1 tsp dried basil
½ tsp salt
½ tsp black pepper
1 batch roasted garlic (the equivalent of 8-10 bulbs of roasted garlic)
2 Knorr chicken cubes
100ml Alpro coconut milk or 100g greek Mevgal yoghurt 0% fat
28g chia seeds
2 slices wholemeal bread
Fry Light low-calorie (garlic) spray
For Garnish (optional): 2 tbsp fresh parsley - minced
10g fresh chives - chopped
1 fresh lemon - cut into wedges
Method:
Heat a non-stick frying pan and fry the onion. Sauté over medium heat, constantly stirring until onions are translucent and golden.
Add the herbs and spices and sauté for an additional 2 minutes.
Add the roasted garlic and stir to combine.
Add water with Knorr chicken cubes.
Simmer for 15 minutes. Reduce the heat to low and add coconut milk or yoghurt.
Using a stainless steel immersion blender, carefully blend the soup until smooth.
Add chia seeds. If desired, garnish with fresh parsley and chives and squeeze a lemon wedge over each bowl.
Serve warm with 2 slices of bread.
