Ingredients:
1 small zucchini - halved lengthwise
1 red sweet pepper- stemmed, seeded, and quartered
½ small red onion - cut into 1/2 inch thick slices
10 asparagus - trimmed
100 g pasta or 2 packs of Slim Pasta
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 tablespoon capers
1 tablespoon oregano

Method:
Preheat the oven grill to 200C.
Lightly spray vegetables with Fry Light Low Calorie Spray.
Place the vegetables on the oven rack. Cook all for a couple of minutes, turning once, until vegetables are tender. Remove and cool slightly.
Cut vegetables into 1/2- inch pieces and toss with pasta in a large bowl. Add remaining balsamic vinegar, salt, and black pepper to pasta mixture; toss to
coat.
Top with fresh oregano.
