Chicken Skewers with Mushrooms & Bell Peppers

Simple high-protein meal. Lean chicken supports muscle health, while colourful veggies add fibre, antioxidants, and essential vitamins for everyday wellness.

Chicken Skewers with Mushrooms & Bell Peppers

Ingredients:

  • 200g chicken breast - diced

  • 10 cherry tomatoes

  • 2 onions - cut into quarters

  • 10 mushrooms - cut in half

  • 2 coloured peppers - deseeded and cut into small cubes

Marinade:

  1. Place all the marinade ingredients into a bowl and mix well.

  2. Marinate the diced chicken for 30 minutes.

  3. Meanwhile, soak the wooden skewers in water.

  4. Place all the vegetables and chicken on the skewers.

  5. Season to taste.

  6. You can barbeque on a grill or cook in a pan.

  7. 2 tablespoons soy sauce

  8. 2 tablespoons mustard

  9. Juice of 1 lime

  10. 1 teaspoon turmeric

  11. 1 tablespoon honey

Method:

  5. Season to taste.
